Brownie

The hardest thing about becoming vegan was probably the desserts and sweet things. But thanks to the internet you can find good recipes to just cook them yourself. This is a recipe of Brownie I found and changed a bit and I just love it now! It has everything like a "regular" brownie and yet it's vegan and easy to bake.

What you need:
- 3/4 cup Cocoa Powder (unsweetened)
- 2 cups white sugar
- 1 cup vegetable oil
- 1 cup water
- 2 cups Flour (use rice flour to make it gluten free)
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract

++ optional: you can put nuts if you want! I usually add walnuts (because I have lots of them at home) but if I have to buy some I'd go for pecan nuts. Almonds and hazelnuts are also quite good!

Preheat your oven at 175 degrees C. In a bowl (quite large) stir together the cocoa powder, sugar, flour, salt and baking powder. Then pour in the water, vegetable oil and vanilla extract. Mix everything together until it is well blended. You can then add the nuts if you want to put some in your brownie. Spread the brownie evenly (and not too thick) in a baking pan. Let it cook during 20 to 30 mins. I have tried it several times and the time will differ from one oven to another. A good hint is to wait when the top of the brownie is not shiny anymore. If you over cook it, it will taste more like a chocolate cake (and won't have the "gooey" part a brownie has).

Je pense que la partie la plus dure dans le fait d'être vegan c'est les gâteaux  les desserts et tous les trucs sucré en général. Heureusement c'est possible de trouver des supers recettes et de cuisiner soi-même des sucreries trop bonnes. Ce brownie je l'ai trouvé aussi bon qu'un brownie classique et pourtant il est bien vegan et tout simple à faire!

Vous aurez besoin de:
- 180gr de poudre 100% cacao
- 500gr de sucre en poudre
- 250ml d'huile végétale (éviter l'huile d'olive un peu trop forte en goût)
- 250ml d'eau
- 500gr de farine (prenez de la farine de riz pour faire un brownie sans gluten)
- une cuillère à café de levure chimique (environ 5gr)
- une cuillère à café (environ 5ml) d'extrait de vanille (vous pouvez aussi remplacer une partie du sucre par un sachet de sucre vanillé!)

++ noix de votre choix (ou rien d'ailleurs). J'aime mettre des noix tout simplement car j'en ai toujours chez moi (merci Papy!) mais les noix de pécan ou amande ou noisette dedans c'est aussi pas mal.

Préchauffez le four à 175 degrès. Dans un grand plat mélangez la farine, le sucre, la levure chimique, le sel et le cacao en poudre. Ajoutez ensuite l'huile, l'eau et l'extrait de vanille. Mélangez bien jusqu'à ce que vous obteniez un appareil bien "lisse" et uniforme. Vous pouvez ensuite ajouter les noix si vous décidez d'en mettre. Verser ensuite la pâte dans un plat à patisserie, surtout étaler le bien (pas plus épais que 3 cm environ). Laissez ensuite le brownie cuire entre 20 et 30 minutes. J'ai remarqué que le temps de cuisson dépend vraiment du four. Il m'est arrivé de le cuire trop longtemps, ce n'est pas un ratage total mais le transforme plutôt en gateau au chocolat car cela enlève le côté moelleux du brownie. Un bon indice: le haut du brownie cesse d'être "brillant" lorsqu'il est cuit.

A week end in Leeds


I had time to stay in Manchester just for a day but I was able to stay in Leeds for 3 whole days. One of my friends lives there so I had the best guide ever! I must say I was really surprised by this city, surprised in a good way. It has everything I love about England and yet it also has a small city feeling (which I love if you don't know it already). Three days were more than enough to do some sightseeing, restaurants and tea room visiting and shopping of course. We went to one of the most amazing tea room I've ever seen: The Marvellous Tea Room. A tea room with all those yummy looking English cakes and sandwiches and of course beautiful teas! Unfortunately no cakes were vegan but you can still have some English Muffins with peanut butter or jam. Considering how much I loved the atmosphere (and the tea pots and cups!!) this was more than enough for me :) Plus there are some vintage shops on the other floors!

What I loved too was the Market where you can find lots of different things at a reasonable price, and also find something to have lunch. Nearby there is an organic shop called "Out of this world" which sells lots of good and cheap products and also sandwich or hot lunch to take away and lots of them are vegan. I was happy to discover this. We also went for lunch at Millies, same kind of shop but where you can seat and have lunch. Good deal for really good food! Vegan option there would be the salads (you can make your own from the buffet) and soups. I tried both and it was amazing. I ended paying 5£ for a soup (and bread) a salad and a dairy free chocolate bar.
Leeds Market
Contrairement à Manchester, j'ai eu le temps de rester un peu plus longtemps à Leeds et de découvrir un peu mieux la ville. Une de mes amis vit là-bas donc j'ai eu la meilleure des guides :) Trois jours étaient suffisants je pense, entre nos pauses dans des salons de thés, nos sessions cuisines et bien sûr le shopping! Il faut dire que j'ai vraiment été agréablement surprise par cette ville. Pour moi l'Angleterre se résume à Londres (ville à laquelle je voue un peu un culte) et finalement Leeds était vraiment un condensé de tout ce que j'aime dans ce pays. On a eu la chance d'aller boire un thé dans le plus incroyable des salons de thé que j'ai jamais vu: The Marvellous Tea Room. Il y avait là une atmosphère très anglaise avec tous ces gâteaux et sandwichs et puis bien sûr les couleurs et les tasses de thés dépareillées! Malheureusement aucun cake vegan mais il vous reste l'option des English Muffins qui peuvent vous être servis avec du beurre de cacahuètes ou de la confiture! Pour moi c'est amplement suffisant quand on s'assoit dans ce cadre atypique et qu'on goûte à leurs superbes thés. Et en plus, pour ne rien gâcher, il y a des fripperies à l'étage!

J'ai aussi adoré le marché de la ville où on peut trouver tout et rien, des légumes aux gadgets. On peut aussi y manger toutes sortes de spécialités. Pas loin de là, il y a une petite boutique bio qui s'appelle "Out of this World" où je me sentais un peu au paradis. Plein de produits géniaux et pas chers, mais aussi une partie épicerie (seulement à emporter) où vous pouvez trouver un grand choix de rolls, sandwichs, pies et autres... vegan! Nous avons aussi mangé dans une autre boutique du même genre mais où cette fois il est possible d'y rester pour le déjeuner: Millies. Vraiment pas cher et nourriture de qualité! Les options vegans sont en gros le buffet de salade (on se compose sa petite "barquette" soit même et c'est 1£ les 100 gr) et les soupes. Pour ma part j'ai testé une petite salade, une soupe (accompagné de leur pain) et une barre de chocolat vegan le tout pour 5£ donc j'étais aux anges :)

Departure Day

I think we all do this when we go on holidays, we try to eat all the food we have that could go bad while we're away. That's how I always end up using everything I have in my fridge in one meal. Sometimes it's frankly disgusting, but some other times it turns out to be surprising, like this one!

I used:

- approximately 120 gr of chickpeas (leftover from a can I opened the day before)
- some mushrooms (6 to 10 I think, up to what you have)
- some crushed tomatoes (again what I had left, I'd say around 50ml... not much)
- half an avocado
optionnal: a bit of basil

Put some olive oil in a pan. Fry the mushrooms and then add the chickpeas (they just need to be re heated) and finally the crushed tomatoes (and the basil). Put in your plate and add the diced avocado on top just before serving.
It's not really cooking because it's very fast but I did like it! 


Je pense qu'on essaye tous d'utiliser les fonds de frigo avant de partir en vacances histoire de ne pas gâcher. Je finis toujours par me faire des plats en combinant tout un tas de choses. Parfois ça finit très mal, d'autres ça finit plutôt bien. Cette fois j'ai vraiment aimé ce petit mélange!

J'ai utilisé:

- environ 100 à 120 gr de pois chiches (les restes d'une boite ouverte la veille)
- 6 à 10 champignons (là encore des restes donc c'est selon)
- un peu de chair de tomates (fond d'une boite, je dirais environ 50 ml)
- un demi avocat
en option: du basilic

Un peu d'huile dans une poêle et on commence par cuire les champignons (pourquoi pas avec un peu de poivre). Puis on ajoute les pois chiches, il s'agit en fait seulement de les rechauffer. Enfin la chair de tomates (et le basilic). On met dans l'assiette et juste avant de servir on peut ajouter l'avocat coupé en dés (j'adore l'effet chaud et froid et les différences de textures).
C'est très rapide donc ce n'est presque pas de la cuisine mais j'ai vraiment aimé :)

Manchester!

When I knew I was going back to France for Christmas I thought It would be nice to try and visit my friends spread throughout Europe for their study abroad year. That's why I went to Manchester. Well also because you can't fly directly from Brussels to Leeds, so why not visiting another city on the way! 
I was lucky enough to have one of my housemates giving me advice on what to do in Manchester if you're just there for one day. The Christmas Marlet in front of the Town Hall was very nice, it's a shame it was raining so much... We also went to a great Vegan place for lunch: Earth Café. It is in the Northern Quarter (Turner Street) and next to a Buddhist Center. It's a buffet and you can have 4 different things in your plate for 6 £ and that's more than enough! There's also some cakes and sweets, vegan again! It was nice to be out of the rain and in a warm place. Then we also went to Afflecks Palace, a mixture between vintage and alternative shops. There is also the Art gallery, which is free (but you're expected to give a donation), and quite nice :)

Quand j'ai su que j'allais rentrer en France pour Noël, je me suis dit que ça allait être l'occasion pour visiter mes amis éparpillés en Europe avec le programme Erasmus. Me voilà donc dans l'avion en direction de Manchester, aussi parce qu'il n'y a pas de ligne directe entre Bruxelles et Leeds.
J'ai de la chance qu'une de mes colocs de Melbourne soit de Manchester et ait pu me conseiller sur quoi faire en un seul jour dans cette ville. Le marché de Noël devant l'hotel de ville était franchement sympa. Dommage il pleuvait... Mais nous avons pu nous abriter dans un super petit café, 100% vegan! Il s'appelle Earth Café et se trouve sur Turner Street, dans le Norther Quarter. Il est affilié à un centre boudhiste. Là vous pouvez choisir jusqu'à 4 plats du buffet, et l'assiette vous revient à 6£. Une assiette est largement suffisante pour un déjeuner! Il y a aussi des desserts, là encore tous vegan. Bref, un endroit vraiment sympathique pour se protéger de la pluie et manger bien et pas cher.
Ensuite nous sommes aussi allées à Afflecks Palace (pas très loin du café, sur Church Street), un mélange de frippes et magasins d'habits neufs mais dans le style vintage ou "alternatifs" disons. C'était un peu la caverne d'Ali baba pour moi, ça vaut le détour!
Il y a aussi la gallerie d'art de la ville, gratuite (mais une donation est attendue) qui est sympa, malheureusement nous n'avions plus beaucoup de temps.

Pesto & courgettes

Let's go for the first "recipe" of this blog. This is an idea that I got from one of my Italian housemates back in Melbourne. We had a thanksgiving dinner all together and he decided to make some pasta, I already thought I would not be able to eat them when he said he made something vegan so that I could try as well! I was so touched by this attention. And of course it was amazing!
For his recipe, he used zucchinis, pine nuts, olive oil and fresh basil. When I got back home (here in France), I really wanted to cook this again. Unfortunately I didn't get any pine nuts just because they were really expensive (well I hope I'll find cheap one somewhere else at one point) so I decided to try something else with what I had at home.

I used (pesto for 3 to 4 serves depending how much you'll use):

- 2 zucchinis
- about 10 walnuts (fresh ones that I peeled), roughly chopped
- 1/4 of a large onion
- 1 tablespoon olive oil
- dehydrated basil (to taste, but as it does not have as much taste as fresh one I used a lot)
- salt and pepper to taste

Cook the zucchinis in boiling water (with the peel so that it doesn't turn into purée). It will take approximately 20 minutes, check with a knife to be sure. At the same time you can sweat the onion. Then when the zucchinis are done peel them (keeping the peel would give you a pesto less "smooth" but I don't think It would change the taste) and cut them roughly. Put them in a bowl or in a food processor with the onion, the walnuts, the olive oil, basil, salt and pepper. Blend everything together until you like the texture (very smooth or with some crunchy bit left) and you're done :)

Alternatives: I think it could be nice to do it with a bit of garlic! and why not try some nutritional yeast in it...

C'est parti pour la première recette de ce blog! C'est une idée qui me vient d'un de mes colocataires italiens de ma maison de Melbourne. On avait fait un petit repas de Thanksgiving et je me disais déjà que je ne pourrais pas goûter ses pâtes quand il me tend une assiette en précisant que c'était vegan! J'étais trop touchée par l'attention :) et bien sûr c'était délicieux!
Pour sa recette, il avait utilisé des courgettes, des pignons de pin, de l'huile d'olive et du basilique frais. Dès que je suis revenue en France j'ai voulu la faire mais je n'ai trouvé que des pignons de pin hors de prix pour le moment donc j'ai décidé d'essayer quelque chose avec ce que j'avais sous la main.

J'ai utilisé (pour 3 à 4 personnes selon la quantité de pesto que vous utilisez):

- 2 courgettes
- une dizaine de noix (que j'ai décortiqué), grossièrement concassées
- 1/4 d'un gros oignon
- une cuillère à soupe d'huile d'olive (à adapter selon l'humidité des courgettes)
- du basilique déshydraté (à votre convenance, j'en ai mis pas mal étant donné que ça a moins de goût que le frais)
- sel et poivre

Faire cuire les courgettes dans de l'eau bouillante. Ca prendra environ 20 minutes, mais il faut vérifier avec une pointe de couteau pour être sûr (quand c'est tendre c'est cuit). En même temps, faire suer l'oignon. Quand les courgettes sont cuites, les éplucher (garder la pelure ferait un pesto plus granuleux mais je ne pense pas que ça modifierait le goût) et les couper grossièrement. Mettre le tout dans un bol (pour ensuite utiliser un mixeur) ou dans un blender avec l'oignon, l'huile, les noix, le basilique, le sel et le poivre. Mixer le tout jusqu'à ce que la texture vous convienne (lisse ou un peu plus "crunchy") et Voilà :)

Variantes: je pense qu'ajouter un peu d'ail pourrait être cool! et pourquoi pas un peu de levure alimentaire... (parmesan végétalien)

A new start.

Here I am starting a blog, again! Only this time I truly have a topic in mind, and something I want to talk about. It's been almost a year now since I decided to go vegetarian. What makes me change my mind? In a word, pollution. After that I realize how deeply meat industry and animals industry in general could transform our land, our earth and even our health. I used to say vegan people were crazy and radical... And yet I became one when I moved to Australia. I don't know if it's the way I've been raised, or maybe a French thing regarding food, but I've spent a lot of time not saying anything to anyone because I didn't want to bother. So I was vegan only at home and in restaurants but not at someone else's place. But now, it is as if I'm ready to say it and defend it: yes I am vegan. So maybe this will help to make people understand why, how, and show them that it is not that difficult.
I don't want to make you feel guilty if you eat animal products, no! I just want people to open their mind and think about new alternatives :)

Me voilà encore commençant un blog! Seulement cette fois j'ai une trame précise en tête. Cela fait maintenant presque un an que j'ai décidé de devenir végétarienne. Pourquoi? En un mot: la pollution. Puis j'ai réalisé à quel point l'industrie de la viande et l'industrie animalière en général pouvait transformer notre planète, notre terre et même notre santé. Moi qui disait que les vegan étaient fous et radicaux... j'en suis devenue une en déménageant en Australie. Je ne sais pas si c'est mon éducation, ou peut être un truc français à propos de la nourriture, mais j'ai passé un bon bout de temps en ne disant rien à personne parce que je ne voulais pas déranger. Donc j'étais vegan chez moi et au restaurant mais pas chez les autres. Mais maintenant c'est comme si j'étais prête à l'assumer et à le dire. Peut être que ceci aidera les gens à comprendre pourquoi et comment, et montrera que ce n'est pas si difficile!
Je ne veux pas donner un sentiment de culpabilité aux gens qui consomment des produits animaux. Je veux juste ouvrir les esprits et faire penser à d'autres alternatives :)
